My favorite treatment of dark leafy greens is a little bacon (or ham. or any cured pork) sauteed with onion and garlic and a pinch of red chili flakes. Add in some broth (or water) and greens & braise until tender. Finish off with a bit of brown sugar and a splash of cider vinegar and serve with hot sauce.<br /><br />In short, Southern style greens rule.
